        Key purchase criteria for industrial ice cream machines

        Continuous freezer vs. batch freezer vs. soft serve

        The continuous freezer is the standard solution for industrial throughputs from around 500 L/h with a consistent recipe. The ice cream mix is fed in continuously, whipped with air (60–120 % overrun) and discharged at approximately –5 °C.

        The batch freezer (mantecatore) is suited to craft manufacturers, gelato parlours and flavour changes: batch production of 2–40 L per cycle with maximum recipe flexibility. Soft serve machines deliver directly portioned soft ice cream from liquid mix – typical for food service and event catering.

        Capacity, overrun and production time

        Nominal capacity is given in litres per hour. What really matters is effective utilisation: overrun (air incorporation), set-up and cleaning times as well as flavour changes reduce the nominal throughput in practice by 20–40 %.

        When purchasing used equipment it pays to compare batch size, daily capacity and cycle count against year of manufacture, operating hours and the condition of the refrigeration unit. We document these parameters for every machine in our inventory.

        Hygienic design, CIP and integrated pasteurization

        Industrial ice cream machines must be designed hygienically (EHEDG, CIP-capable). For higher volumes an integrated or upstream pasteurization (65–85 °C) is required – either as a batch mix pasteurizer or as a flow-through heater.

        Look for documented CIP circuits, fully dismantlable product contact and the correct materials (stainless steel 316 / 1.4571 in product contact). For regulated operations (HACCP, IFS, FDA) complete technical documentation is mandatory.

        Frequently asked questions about used industrial ice cream machines

        Used industrial ice cream machines typically range from around €8,000 (small batch freezer) to over €200,000 (large continuous freezer with integrated pasteurization).

        Key price drivers are year of manufacture, operating hours, throughput (L/h), manufacturer (Carpigiani, Gram, Hoyer), the condition of the refrigeration unit and any supplied peripherals (fruit feeders, CIP unit). As a rule of thumb, an inspected used ice cream machine costs roughly 30–50 % of a comparable new machine – with much shorter lead times.

        A continuous freezer continuously freezes the pasteurized ice cream mix while simultaneously whipping air (overrun) into it. The mix passes through a chilled cylinder with a rotating dasher that scrapes the frozen crystals off the wall and homogenises the mass.

        In industrial ice cream production the mix (milk, cream, sugar, emulsifiers, flavourings) is pasteurized before freezing to eliminate pathogens and achieve a uniform texture.

        Two methods are typical: high-temperature short-time (HTST) at around 82 °C for 25 seconds, or low-temperature long-time at 65 °C for 30 minutes. The mix then passes through a homogenizer and an ageing tank before being processed into ice cream in a continuous or batch freezer. Mix pasteurizers are part of our ice cream machine inventory.
